It seems as though everyone is talking about the mega millions jackpot today. While that would be nice to win, I’m more concerned with a little game going on tomorrow… ku vs ohio state. I am so nervous and it’s still 24+ hours away. I am such an anxious fan. I yell. I hold my breath. I pace the room. So what’s a girl to do? Bake of course. {emotional eating}

If you’re my friend, you know my obsession for cakeballs. I like to say I’ve mastered the technique over the last few years but I’m no bakerella. So, if when we make it to the championship game, I plan to make these bad boys for a game time treat.

All you jayhawk fans out there, let’s come together and wave the wheat!!

busy days ahead

Have you ever had one of those weeks where you need about triple the hours in a day? where you have 10 lists going but still feel unorganized {and overwhelmed} ? I’m having one of those weeks. Not in a bad way.  To be busy is a great thing. A lucky thing in my line of work. But sometimes you need a reminder to take a breath and slow down. So, if you are feeling like me, step outside for a few minutes and enjoy the fresh, spring air. The work will be waiting for you when you get back.

I keep trying to tell myself that we aren’t out of the woods just yet with a spring snow storm, but what’s a girl to do when it feels like summer, other than put on a skirt, throw on the sandals and grab a drink on the patio?

a new edition

introducing {drumroll, please} wedding wednesday!
okay, yes, it’s Thursday. But, I couldn’t wait a week to tell you about this!

Since weddings + parties are quickly becoming my main clients, I thought, why not blog about it? So I am. Every Wednesday I will feature something about weddings. It could be a style shoot, invitations, DIY projects, vendors, table settings, color scheme, etc etc. Anything that can inspire.

So, let’s kick this thing off with a wooded-wonderland style shoot that I had the pleasure of being apart of back in February. We picked the perfect, secluded cabin in the woods of Frisco, Colorado. Flannel, cotton and twigs inspired us as we gathered “camp-like” elements to create a cozy and peaceful scene.

hipster branding

have you seen the “hipster branding” tumblr yet? If not, give it a look.

Adweek wrote an article about it last week and I have to agree with some of the points made. A few of the “new” logos are eye-catching and maybe more appealing, typographically, but what exactly makes them hipster?

quinoa is the new bacon

Lately, I can’t get enough quinoa. For whatever reason, around dinner time, I find myself reaching for this yummy, little “grain” and making a meal out of it. It’s so easy and so good for you. {bonus!}

Recently, my go-tos have been quinoa fritters and a cheesy, roasted veggie quinoa bowl. 
First up, the fritters. I’ve made these puppies several times and they keep getting better and better.
On this particular night, I put them on a bed of arugula with roasted chickpeas and a homemade greek yogurt aioli sauce.

Next up, the veggie quinoa bowl. I saw this recipe and thought, what a great idea! Cook up some quinoa and throw in whatever you might have in your fridge. Oddly enough, I had several of the ingredients already listed on the recipe. I roasted brussel sprouts and fingerling potatoes, toasted some pine nuts and wilted a handful of arugula. Mix it together, throw in some cheese and you have yourself a very delicious and filling meal! I can’t wait to throw some grilled veggies on it and give it a summer spin.

a yummy snack

a friend recently told me about roasted chickpeas. I hadn’t tried them before, so I gave it a go.
oh-my-goodness. they are delicious. once you pop, you can’t stop.
{and luckily, it’s pretty healthy}

Here’s what you do:

set oven to 400
rinse + dry chickpeas
sprinkle with any seasoning you’d like
spread on a cookie sheet and bake, 20-30 mins

{ideas}
craving something salty? drizzle with olive oil and top with garlic salt, pepper and chili powder
need something sweet? toss them in sugar and cinnamon.

and so it begins

One of the best days of the year is upon us. That’s right, folks… march madness starts today. I know to some this may seem crazy but if you are a fellow jayhawk, then I know you woke up with the same anticipation and excitement nervousness that I did. While KU is generally known for its basketball program, we have also been known to, well, choke in the early rounds of the tourney. But not this year. I have a good feeling. So, round up your friends, fill out your brackets and let’s do this!
